Ok so I've kinda been eating a shit load of avocados lately!
Not just because I love them, but because I bought a giant bag at Costco and couldn't let them go bad! I also bought a big ass thing of corn on the cob so i've been trying to use that too (yes this recipe has corn in it)!
Naturally, smashing the avocados and putting them on toast is the easiest, fastest and most yummy breakfast. (Fastest being the key word here!) I have an almost 8 month old so I don't have too much time to cook while he's awake.
Anyway, this morning I decided I wanted eggs but Avo toast too and thought "hey! I'll just combine my two favorite types of toast!" And that is how this recipe came about.
1/2 Avo (smashed)
1 piece of Bread (your choice)
1 Tbsp Butter (I use Kerrygold bc it's the best!)
1/2 cob of Corn Kernels Roasted
Juice of 1/2 Lime
Pinch of Salt
Use a round cookie cutter or end of a champagne flute like me, and cut out a circle in your bread by pushing and turning it.
Cut corn off the cob and toss w a little olive oil salt&pepper. Broil for about 5 min.
While the corn is roasting smash avo and lime juice together using a fork.
Melt 1/2 tbsp butter in a non stick pan to toast up your bread. I flipped it a few times for about 1.5 min.
Next add the rest of the butter to the hole in the bread and crack your egg in it. Let cook for about 1 min then flip. Let cook 1 min more.
Remove corn from oven and toast from the pan - Add avo to the toast and top with corn kernels, cilantro & your hot sauce of choice!
I used sriracha AND cholula green chili sauce bc that shit is delicious!
