Ya'll may remember the cheesy chicken and rice bake from my IG stories a couple of weeks ago and you may not. Either way, you need to know how to make it because not only is it incredibly easy but super yummy as well!
This recipe is so easy and only requires a few steps! You simply take all the chicken off the bones and place in a mixing bowl.
I got hit with the stomach flu that week and it literally lasted from Sunday-Friday!
IT WAS AWFUL!
I will spare you the details but just hope it doesn't hit you.
By Thursday I was STARVING! I had lost about 4lbs and was ready to gnaw my arm off; I knew whatever I ate needed to be simple. I had always heard that when a dog has an upset stomach to feed them chicken and rice so I thought, same applies to me. But I can't just eat boiled chicken and rice. The day before I had picked up a rotisserie chicken so I could at least feed my husband. I cut just a bit of breast pieces for him and made him mashed potatoes to go with it. I was virtually left with the entire chicken. Normally I do not like the dark meat, but for this, I've no qualms using every bit of the meat I can get. Plus, I hate wasting.
Since I had just gone to the store the day before I didn't want to go back but a las, I needed 3 key ingredients, so back to the store i went. See, I could go to the grocery store every day, I love it!! My son is a little angel so I never have to worry about that, but I end up buying unnecessary items that will end up going bad and I spend too much money when i do that!!
You can use whatever type(s) of cheese you'd like but I used what i had on hand; I usually keep several different types of cheese in my fridge at all times. For this recipe I used parmesan, gruyere and mozzarella. I shred about two cups total then divided it using half in the mixture then the rest went on top.
I can honestly say I do not use a lot of canned items but if you want something fast and easy canned can be the best way to go. Plus. these days you can find organic and low sodium canned products. For this i just used cream of chicken and cream of celery. I could've used cream of mushroom too but yuck! I do not care for mushrooms. I also added some lemon juice to brighten it up a bit along with garlic and onion powder and panko breadcrumbs for topping to give a good crunch!
1 Rotisserie Chicken (meat off the bone)
1 Can of Cream of Chicken Soup
1 Can of Cream of Celery Soup
2 cups of Shredded Cheese (whatever you prefer)
Juice of Half a Lemon
1 Cup of Brown Rice
Panko Bread Crumbs
1/2 Tbsp Italian Seasoning
Salt and Pepper to Taste
Pre-heat oven to 350.
Pull/cut meat off the chicken bones and add to a large mixing bowl.
Add all ingredients except bread crumbs and only half of the cheese, to chicken. Mix well.
Add to a round or square baking dish that's been sprayed with olive oil.
Bake for 25 minutes then broil on low for the last 5 minutes or until golden brown.
Once you have everything mixed well, you just pop it in the oven and let it bake! It's literally one of the easiest recipes ever! Perfect for the long days when you just don't feel like cooking or in my case when you've been sick all week.
It's also something that is kid and picky eating husband friendly;)
