Broccoli Tots

I feel like the luckiest mom on the planet when it comes to my son and his eating habits. He will literally eat anything I feed him.  Except for eggs and mashed potatoes! WTH?  I can only assume it's a texture thing.  For the majority of my life I HATED eggs, loathed them.  Until several years ago when I realized I had never really given them a fair chance and that I should probably stop being one of those people who claim to not like something, even though they really haven't given them a shot.  Fast forward to today and I love eggs any way you can make them, except deviled eggs, I don't care for those.  

 

The only green veggie Maddux had eaten were peas and he really enjoyed them.  I was unsure of broccoli because I didn't know if he'd be able to chew it up good enough.  One day while grocery shopping I found broccoli tots and thought it'd be a good way to introduce him to broccoli. He LOVED them! Like, ate about five of them.  So I began to buy them on an almost weekly basis.  I then thought, hm wonder if he likes plain broccoli just as much?  Turns out he does!  So, I began buying the bags of frozen broccoli and when I realized I was out of tots I knew I could just make my own;  they're free of all the sodium and preservatives, really easy to make and only require a few ingredients. 

 All I did was boil some frozen broccoli and then make the tots like I would meatballs.  It obviously takes more time than just popping something in the oven but there's no extra unnecessary crap in them.  Plus, you can always freeze these! 

 

 

 This recipe yields 10 tots but I only used half a bag of broccoli.  Next time I'll probably make a bag and a half and keep some in the freezer. These really were yummy and I honestly like them for myself too; they'd make a great little snack or appetizer if you're a health conscious person like myself;)  

INGREDIENTS

  • 1 Bag frozen broccoli 

  • 1/2 Cup shredded parmesan cheese

  • 1/2 Tbsp flour or bread crumbs

  • 1 Egg 

  • Veggie stock, just enough to boil broccoli in

  • Salt&Pepper

Directions

  1. In a medium sized pot, boil broccoli until very tender. Pre-heat oven to 350.

  2. When done, remove from heat and strain.  Let cool, then ring out access water using cheese cloth or a kitchen towel.  

  3. In a mixing bowl add ingredients and mix well.  

  4. Spray a baking sheet with olive oil.

  5. Using a tbsp for measurement, scoop out the mixture a tbsp at a time into your hand and form the 'tots'.  

  6. Place them on the baking sheet and bake about 10 minutes, flipping once.  

  7. Remove from oven and let cool.  

  8. serve alone or with ranch dressing for dipping if you're making this as an app!
