Chocolate-Mint Crackles with a Christmas Twist

I think I have baked more these last couple of months than I ever have! Or at least consecutively anyway. I've thoroughly enjoyed it despite my past of not loving to bake. I suppose I realized that if I was going to have a successful catering career, that it would behoove me to learn to bake. So here I am, on my fifth or sixth dessert since the beginning of November.


I joined a mommy-and-me work out group in my city back in October and tomorrow we are doing a holiday cookie exchange after class! I originally planned to make my moms AMAZING oatmeal cookies but then decided I wanted to bring something more festive. Now, I can cook any dish off the cusp, however, I cannot do the same when it comes to baking! My mind just doesn't work like that lol So, I went to good ole

I had the idea to dip half the cookies in chocolate and sprinkle crushed candy canes on them to make them festive but as you can see, I ended up only doing half that way because I didn't love how they turned out. I felt like it took away from the beautiful simplicity of the original cookie. I don't think they turned out ugly or anything, it's just some things don't need to be messed with!

After baking the cookies, I let them cool, melted some bakers white chocolate in the microwave in 30 sec intervals, stirring in between, then used a spoon to pour and spread the chocolate on half the cookie. I then placed them on a bakers rack on a baking sheet, and lastly sprinkled some candy canes I crushed in a plastic bag with a long round object AKA an old olive oil dispenser; a rolling pin will work too.

These cookies are so good without the "twist" but I think I succeeded in making them at least look a bit more festive! You can get the recipe HERE.
