Lasagna Soup

I told ya'll I made a lot of soups and stews in the winter time...I wasn't playing!! Aside from the fact they're so easy, they're also delicious, comforting and hearty.  I'm sure I've said that about the other ones I've made and this one is no different.  

 

In my last post I mentioned we got 9" of snow here in Georgia so I made the best beef stew And since it remained pretty damn cold for days after, and left snow on the ground for about a week, I decided I needed to make a soup next.  I've never made lasagna soup but knew it'd be super easy and fast.  You can turn just about any dish into a soup! 

The only ingredient I needed was broth, everything else I already had.  Instead of ground meat, I used chicken breast because that's what I had on hand.  Yes, you can make a chicken lasagna too! When I suggested it to my husband he verbally repeated it back to me with a bit of skepticism; he had about three servings of it that evening. 

 

 

I just simply cut chicken breast into bite sized pieces and browned them in olive oil, butter and salt & pepper for about 10 minutes.  Removed them from the pot, I used my dutch oven...again, then deglazed the pot with the stock.  I then added all ingredients, added the chicken back, stirred everything together and added the noodles in last and let simmer on low for about 12 minutes.  It was so easy and turned out DELICIOUS!!

 

 

 

INGREDIENTS

  • 2 Chicken breast cut into chunks 

  • 8-10 Lasagna noodles broken haphazardly

  • 1 Box chicken stock

  • 1 Can fire roasted tomates

  • 1 Can tomato sauce

  • 1 Large garlic clove finely minced

  • 1/2 Cup heave cream

  • 1 Tbsp Italian seasoning

  • 1 Tbsp butter

  • 1 Tbsp olive oil

  • Fresh thyme

  • Finely grated parmesan cheese.  About 1 cup total

DIRECTIONS

  1. Heat olive oil and butter in large pot over med-high heat

  2. Add chicken and cook, stirring frequently, for about 10 minutes

  3. Remove from heat, add stock, turn heat to low, and scrap/deglaze the bottom using a wooden spoon

  4. Add the chicken along with the rest of the ingredients EXCEPT the cream and noodles

  5. Let simmer on low a few minutes 

  6. Break the noodles off into the soup in pieces as big or as small as you'd like

  7. Let simmer about 10 min then stir in the cream and half of the cheese

  8. Serve with fresh thyme or basil and the rest of the cheese

 

"It's Christmas and we're all miserable..." jk I'm not miserable but I can never pass up a chance to insert a NL Christmas quote!! Though, if you are miserable and struggling to find a recipe to please a crowd, why not make this and take a little of the crazy out of the remaining holiday weeks! I promise, it'll be a hit with the grumpiest of house guest ;)
