HOLY CRAP, IM POSTING ON THE BLOG!! Man, it's literally been almost three freaking months...but I've good reason. See, I decided to go back to work and boy have I! Not part time or some from home gig, no I decided to go back to work FULL TIME, as a pre-k teacher. For those who don't know, I hadn't worked since I was about three months pregnant, aside from a few cooking gigs here and there. My son turned 16 months old last month, so going back to work was a HUGE adjustment for both of us. I wasn't quite sure I had made the right decision at first but after a few weeks it became easier and seeing my son flourish at school made me realize I had made the right choice for us. The best thing about all of this is that he comes to work with me and is in the class just down the hall! I get to check on him frequently, watch him play outside and don't have to drive to pick him up when the day is over.
My point is, my week days are consumed with work and night times hardly lend much time to really cook like I used to. But when you have a really good reason to spend time on something special, you make the time. This particular time it was for Maddux' teacher because it's teacher appreciation week. Now that I'm a teacher, I'm even more grateful for them. Today was bring your teacher their favorite candy. I knew I could just bring in a candy bar or bag of chocolate but I wanted to go the extra mile and bring her something homemade and different that included chocolate. My mind automatically went to chocolate covered strawberries! They're easy to make but also say "hey I put a lot of thought and effort into these!" I was unsure of how to pack them but quickly remembered I had just used up a double sided container of raspberries...BINGO! With a little parchment paper and a Savory Soul label ;) it worked perfectly. She absolutely loved them and I couldn't have been happier to give them to her. She puts my heart at ease knowing my baby is in great hands so this was the least I could do.
These were truly really easy to make and only required a few ingredients/tools. You of course don't have to make the white chocolate drizzle but I had it on hand so I thought, why not? They definitely look homemade but that's the best part!! If you have a teacher or any women in your life you want to show appreciation for, these would be the perfect sweet treat...Mother's Day is Sunday ya know! ;)
White baking chocolate
Double boiler (pot and glass mixing bowl)
Small ziplock bag
Add a few inches of water to a pot then place the bowl on top. Make sure the bowl sits up high enough that it is not touching the water.
Turn heat on med-high until water is simmering.
Add white chocolate and stir until fulling melted.
Add to the corner of the ziplock bag and set aside until ready to use.
Scrap the bowl with a spatula then melt the dark chocolate in the same fashion.
Remove dark chocolate from boiler and let cool a bit.
While the chocolate is cooling, line a baking sheet with parchment paper.
Once the chocolate is cooled, dip strawberries then place on the parchment paper.
Put strawberries in the freezer for about 15 min.
Put the white chocolate in the microwave for about 20 sec.
Remove strawberries from freezer, cut the corner of the plastic bag to create a piping bag and drizzle the white chocolate over strawberries in a quick back and forth motion.
Let set, then package however you'd like! Store in fridge until ready to gift.
